Budae Jjigae For Two Sleepy People


  It was a long day and we were heading back home. A bit too late to have dinner someplace, but too early to sleep it off. So we stop by at a grocery store and buy things to cook at home. 

We want simple food, Japanese simple food maybe as we are both been watching Izakaya Bottakuri lately. For those who don't know Izakaya Bottakuri, it's an Original Netflix series from Japan that revolves around an Izakaya that serves simple Japanese Homecooking. Each episode features a dish or two that is globally popular, so we both are always busy googling and reading about the featured dish.

As we are busy thinking in the store, we remembered that we once saw a post in a timeline that tells us about a dish that was created by the South Korean Army during the Korean War. A Budae Jjigae, it's a mixture of American preserved foods (sausages, spams etc) with preserved Korean food (gochujang, kimchi). 

During the war, the GI smuggled food for the South Korean Army, but the food tasted too strange for them. So instead they levelled it up by mixing it up with all things available. Long story short, Budae Jjigae became one of the famous Korean dishes.

So we made ourselves a pot of Budae Jjigae for two because the other 3 were staying at their grandma's.

Here's the recipe, make yours now. Perfect for a cold night!

Main dish:

  • 750ml of stocks. I use dashi stocks but chicken stocks are okay
  • Mushroom. Any kind. For best texture and taste combine Shitake, King Oyster and Enoki
  • Cold cuts - any kind. Sausages, meatballs, whatever.
  • Silk Milky Tofu
  • 1/2 Cup Kimchi. Prepare extra, there's no such thing as "too much kimchi"
  • 4 portions of dried noodle
  • 50gr green onion, thinly & diagonally sliced
  • 3 slices of cheese - Mozarella preferred
  • 2 Eggs
  • Roasted sesame
  • Chilli Flakes

Sauce 
1 Tbsp of Korean chili paste (Gochujang)
2 Tbsp of Mirin (rice wine)
1 Tbsp of Soy Sauce
1/2 Tbsp of Sugar
1 Tbsp of Mincer Garlic

Directions

  1. Put all the mains in the pot (exclude noodle, green onion, cheese and eggs)
  2. Add stocks and the sauce. Close the lid and let it cook until boiling
  3. Once boiled, add noodles, onions and cheese. Cook it up.
  4. Once boiled, put it in a bowl, add raw egg yolk, sesame seeds and chilli flakes.
